To make them gluten-free, simply replace bulgur with rice :)
You Will Need:
- 2 cups bulgur (or rice for GF version)
- 1/2 jar Gheymeh - Persian Recipe Base
- 8 pitted prunes (or apricots)
- 3 tbsp chickpeas flour
- 1/4 cup chopped parsley (optional)
- Spray oil
Directions:
1- Cook the bulgur base using the packaging instructions and transfer it to a strainer. Make sure it doesn’t have excess liquid.
2- Mix the cooked bulgur, Exotic Bazaar's Gheymeh sauce, chickpea flour and chopped parsley. The ingredients should hold together.
*add extra chickpea flour if needed to help bind the ingredients together.
3- Line a baking tray with parchment paper and preheat the oven to 180C (fan-forced)
4- Spoon the bulgur mix and flatten into the palm of your hand. Insert a prune or apricot in the middle and fold over the mixture to form a ball shape.
5- Place the bulgur balls on the baking tray and spray them with olive oil.
6- In a preheated oven, bake for 20-25 minutes or until golden coloured.
7- Serve with salad and pickles of your choice.
