Easy Moroccan Chicken Tagine Recipe

This easy & delicious Moroccan-inspired dish is loaded with aromatic zesty & flavours. Ignite your senses with the combination of chili and cardamom, it will leave your palette craving for more.

You can easily throw this together for your midweek 'Exotic night', or share your newly discovered Moroccan favourite with friends at a dinner party. Have fun and create your own version using different veggie combinations, dried fruit, preserved lemon & garnish. Try this Tagine with either bulgur, rice, or couscous and a freshly made side salad and pickles of choice :) 

 Easy Moroccan Chicken Tagine Recipe - Serves for 4

INGREDIENTS:

  • - 1 jar Moroccan Recipe Base - Tagine
  • - 4 pieces of chicken
  • - 1 medium-sized onion diced
  • - 1 cup sliced zucchini
  • - 1 cup sliced carrot
  • - 2 medium potatoes cut into wedges
  • - 1 can of chickpeas
  • - Salt & pepper to taste
  • - Coriander for garnish
  • - Optional: Chili Flakes
METHOD:
1 - Heat oil in heavy skillet. Add onions and cook over a medium-low heat, until lightly browned.
2 - Add chicken pieces and brown on all sides.
3 - Add one cup of boiling water/stock, replace the lid and allow to simmer.
4 - Meanwhile in a medium-sized frying pan, fry the potatoes first then the carrots, followed by the zucchini.
5 - Add in the chickpeas and fry for an extra minute.
6 - Add the browned vegetables & chickpeas to the skillet.
7 - Stir in one jar of Tagine cooking sauce. Add half a jar of boiling water (if needed).
8 - Turn up the heat and once it is boiling let it then simmer for an additional 20 minutes or until the veg is cooked.
9 - Sesaon to taste (add the chili flakes if you prefer extra heat).
10 - Garnish with the chopped coriander and enjoy with either couscous, rice or bulgur and a side of salad, plain yoghurt and pickles.
